THE JOB:

Aria Resort & Casino is hiring a skilled and dedicated Executive Sous Pastry Chef to create high-quality desserts for restaurants and banquets. This role involves overseeing pastry operations, teaching coursework, training kitchen staff, staying updated on industry trends, crafting diverse dessert menus, and researching innovative recipes. As a key part of the culinary team, the Executive Sous Pastry Chef will collaborate with the Executive Pastry Chef, providing leadership in recipe management, inventory control, staff supervision, and executing initiatives directed by property Food and Beverage leadership. THE DAY-TO-DAY:

  • Lead and oversee daily kitchen operations, fiscal budgets, labor productivity, scheduling, inventory control, guest service standards, and execution and development of menu strategies to produce short-term profitability

  • Execute on the business plan and assist Executive Chef with developing and executing tactics to achieve goals and targets

  • Responsible for execution of policies, operating procedures, training programs, directives, menus, rules, and regulations for the staff

  • Maintain the highest standards of health, sanitation, and cleanliness within all areas of kitchen

  • Assist Executive Chef with managing Human Resources responsibilities for Restaurant to include: creating a work environment that promotes teamwork, performance feedback (coaching and counseling), recognition, mutual respect and employee satisfaction; quality hiring, training and succession planning process that encompass the company's diversity commitment; adherence to the company's status quo third party representation philosophy; compliance with company policies, legal requirements, employment law, and collective bargaining agreements

THE IDEAL CANDIDATE:

  • At least two years of experience in pastry industry, including large production, high-volume kitchens

  • Knowledgeable in cake decorating and building larger cakes and displays

  • Knowledge in high-end pastries and desserts, lamination, chocolate, sugar work, doughs, formulation, and accurate calculation ratios

  • Knowledge of gelato preparation, base, churning and freezing

  • Expertise in executing artistic chocolate and/or sugar showpieces and displays. Sugar Pulled, blown, and cast or poured techniques, chocolate sculpting, carving, molding, and different finishes

  • Knowledge of current high end luxury pastry trends

  • Bachelor's Degree or equivalent experience in a realted field
